A good vintage characterized by well-distributed rainfall during spring season and an optimal climate during the harvest.
VINIFICATION AND AGEING
Careful grape selection during the harvest. The alcoholic fermentation and maceration take place in temperature-controlled stainless-steel vats for approximately 20 days, to softly extract all the grapes potential. Total aging is 30 months of which 12 months in large Slavonian oak casks for Sangiovese and barriques and tonneaux for Merlot and Cab. Sauvignon. Blended wine, then, is aged in concrete vats and at least 3 months in bottle.

A good vintage characterized by well-distributed rainfall during spring season and an optimal climate during the harvest.
VINIFICATION AND AGEING
The harvest started at the beginning of September with Merlot, Sangiovese in the second half of the month and Cabernet Sauvignon in the first half of October. The alcoholic fermentation takes place in stainless steel vats for 10 days, followed by 15 days of skin maceration for Sangiovese, 20 for Merlot and 25 for Cabernet Sauvignon. After the malolactic fermentation, the wine ages in new French barriques for about 18 months.

The alcoholic fermentation and maceration aided by punching down and délestage takes place in temperature-controlled stainless-steel vats. The malolactic fermentation is carried out in new French barriques with repeated bâtonnage. Alauda ages in French barriques for

WHY?
Alauda is a blend of international grapes and Colorino, a native Tuscan grape variety that was on the brink of extinction and has been recovered in recent years through research and promotion, which Ruffino has always believed in. It is the only Ruffino wine featuring predominately Cabernet Franc.
Alauda is only produced in limited amounts and in exceptional vintages.

The grapes to produce this wine come from areas suitable for viticulture in Friuli Venezia Giulia, famous for the production of refreshing white wines. Soil: abundant in clay and limestone, plus sand and gravel, giving elegance and structure to the wine. Altitude: variable from 150 to 250 meters above sea level.
VINIFICATION AND AGEING
After being harvested and destemmed, the grapes are cooled and gently pressed. The alcoholic fermentation and subsequent aging take place in temperature-controlled stainless steel vats. The aging continues in temperature-controlled stainless steel vats.

WHY?
The Brunello di Montalcino appellation is universally recognized as one of the top interpretations of the Sangiovese grape, which is known locally as Brunello, and is the sole grape used in this wine.
A traditional style is adopted for this Brunello di Montalcino DOCG with ageing in big barrels, bestowing finesse and elegance upon the wine.
25 hectares of vineyards are divided into two separate areas: “Greppi “, a zone with steep, angular hills, and “Le Logge”, in the south of the appellation.

VINIFICATION AND AGEING
The carefully selected grapes are pressed to obtain the must. Only a part of the must undergoes alcoholic fermentation to become wine, while the remainder is stored in the cellar at zero degrees. This process guarantees the availability of a quality cuvee long after the harvest. Before the sparkling process, the must and the wine are blended and
refermented in pressurized tanks using selected yeasts according to the Charmat method. This process, which lasts about a month, guarantees a refined perlage and preserves the fruity aromas of the variety.
WHY?
Ruffino applies a clear protocol for the production of its Prosecco. After pressing, the juice is frozen in order to ensure the availability of a high-quality cuvee over time. The fermentation process occurs later, upholding the hallmark fruity and floral aromas of the grape variety.
